The Easiest, Creamiest Vegan Mac N Cheese Recipe

Omgggg you guys, I have found the PERFECT vegan Mac ‘n Cheese recipe that will make you think it’s the real thing. I missed Mac ‘n Cheese so much when I switched to a vegan lifestyle, and let’s be real – vegan cheese just doesn’t cut it sometimes. But this recipe is mind-blowingly good, and it’s also only made from nuts and veggies!! You won’t have any guilt eating this creamy, delicious meal, neither for the animals nor your health.

THE CREAMIEST, EASIEST VEGAN MAC N CHEESE RECIPE

INGREDIENTS:
2 2/3 cups macaroni of choice (whole wheat or gluten free pasta as a healthy alternative)
1 cup peeled, diced potatoes
1/4 cup peeled, diced carrots
1/3 cup chopped white onion
1/2 cup raw cashews
1/2 cup almond milk, unsweetened original
2 tbsp nutritional yeast
1 tbsp lemon juice
salt and pepper to taste
pinch of paprika

RECIPE:
– Soak cashews overnight. (Do not skip this step! This is key to making the sauce super creamy)
– Cook macaroni, drain and set aside.
– Boil chopped potatoes, carrots and onions for 10 minutes or until softened.
– Using a **high speed blender** (I use a Vitamix), blend boiled vegetables, soaked cashews and all remaining sauce ingredients until smooth.
– Pour sauce over macaroni, garnish with paprika, and ENJOY!

Note: If the sauce is too thick for you, slowly add more almond milk (up to an additional 1/2 cup) until you get the desired consistency.

A high speed blender and soaking the cashews overnight are two vital parts that definitely make this Mac ‘n Cheese recipe so delicious. The Vitamix I use is very basic, so you don’t need to go out and splurge on a $500 blender. It wasn’t easy for me to even splurge on the basic option, but it has changed my life!! I have so many more recipe options that my Magic Bullet wasn’t even remotely capable of doing. (It was actually pretty hysterical. You should have seen my first attempt at this, haha.) I promise you, a Vitamix is so worth the buy!

If you didn’t plan ahead and soak your cashews overnight, you can soak them in hot water for 5 minutes. You will still get a creamy sauce, but it won’t be quite as smooth as soaking them overnight. I do this sometimes and the sauce is still very enjoyable!

    I will definitely try it even though I admit I am skeptical. I went vegetarian a long time ago, and mostly vegan in 2017. I have since transitioned fully but have never found a mac n cheez that tastes good to me. I am always game for a new recipe! I hope you post more recipes soon! I need ideas for all meals. I work in an office and never know what to pack. Prep time needs to be minimal because I get up at 5AM for work and do not get home until after 5PM.
